Hyatt Regency Chennai invites guests to embark on a vibrant culinary journey through three of India’s most celebrated food destinations with “From Charminar to Chowringee – Spice Haat.” Taking place over three weekends at Spice Haat, the special dining experience will bring the distinctive flavors, aromas and traditions of Hyderabad, Lucknow and Bengal to life through live food stations, regional delicacies, traditional beverages and indulgent desserts.

The culinary journey begins in Hyderabad, where guests can enjoy a live Haleem station complete with traditional garnishes, along with an Irani Chai and Osmania Biscuit counter inspired by the city’s iconic tea culture. Street-food favorites such as Dahi Vada and Mirchi Bajji will be complemented by classic desserts including Double ka Meetha and Khubani ka Meetha.

The experience then moves to Lucknow, celebrating the elegance of Awadhi cuisine. A Kebab Tandoor Live station will feature Galouti and Kakori kebabs, while an Awadhi Pulao and Sheermal counter will showcase the region’s royal culinary heritage. Shahi Tukda, Kulfi Falooda and traditional Lucknowi Chai, accompanied by Ghazal evenings, will add to the Nawabi-inspired experience.

The final chapter takes guests to Bengal, with Kolkata’s lively street-food culture at the heart of the evening. A live Puchka and Jhalmuri counter will be joined by a dedicated fish curry showcase featuring Macher Jhol and Mustard Hilsa. The Meat Lover’s Corner will offer Kosha Mangsho with Luchi, while Mishti Doi, Sandesh and Rasgulla will bring the Bengali feast to a sweet conclusion.

Each dinner buffet will offer an immersive celebration of India’s diverse culinary traditions, allowing guests to explore the unique character of each destination through authentic flavors, live preparation and regional specialties.
