Syrian Christian cuisine is one of the most celebrated Kerala cuisines which have been influenced by multiple cultures apart from the ancient Hindu cooking methods. The cuisine is a reflection of their prosperous history which also gives an insight into their culture. The cuisine mainly offers luscious non-vegetarian delicacies which are cooked using traditional Kerala spices. The vegetables are cooked either with few spices and steamed in their own juices or simmered in yogurt and coconut.
"Hailing from Kuravilangad, Ms. Aleyamma is known for her authentic Syrian-Christian delicacies. Apart from the traditional curries and main courses, she is also known for her delectable snacks like Kuzhalappam, Achappam (Rose Cookies) and Churuttu etc. The Ente Keralam chefs along with Ms. Aleyamma have created the unique menu which highlights the speciality of Syrian Christian cuisine at its best," says Chef Aji Joseph, Corporate Chef of Oriental Cuisines of Pvt. Ltd.
Some of the best menu features an array of starters such as Idi Erachi (Idi erachi is an air dried beef preparation which is pulled to make thin strips along with freshly crushed shallots, garlic, curry leaves etc,) Aattirachi Kurumulagittu Olarthiyathu (Mutton cooked in freshly ground black pepper and coconut masala), curries like Ishtew (Ishtew is the Christian version of the Western stew, Ishtew has a subtle blend of whole spices and the vegetables simmered in coconut milk), Onakka Meen ThengaKothu Curry (Dried fish cooked with cut coconut pieces, a spicy red chilly and kokum gravy) ErachiPeralan (this is a kind of country style preparation with slices of beef cooked in thick gravy with good flavour of coriander and whole spices) desserts like Paaniyum Pazhavum (Paani is a very exotic syrup made by reducing the palm toddy to a syrup consistency) Vattayappam (Vattayappam is again usually an evening snack preparation which is made with rice flour and ground coconut and sugar) etc. Apart from the irresistible dishes, the festival also features variety of kappa curries, appam and puttu.
